That on the uchepos was probably also queso fresco, but I didn't taste them or get details from our compañeros seated across from us, so I can't say for sure.<br /><br />There was no cheese on the corundas. They are unrelated to the chivichanga. The cheese on the corundas is queso fresco, not Cotija. Uchepos can be either salados or dulces, depending on who is making them.
